Recipe: Jalapeno Corn Bread

What you need:
A 9 inch square baking pan or a cake pan
An oven
1 8.5 oz can of cream style corn
1 Cup yellow corn meal
3/4 cup buttermilk
1/2 cup corn oil
3 ozs shredded Cheddar Cheese
3 eggs
2 jalapeno peppers, minced
1 tsp salt
1/2 tsp baking soda
2 tbl butter
Beer

Preheat that oven to 400

Mix everything (except the beer) in a big ol’ bowl until it’s…mixed.
Melt the butter in a 9 inch square baking pan. 2-3 minutes in that oven should do it.
Pour the mix in the pan, right over the butter and bake that baby for about 35 minutes.
Have a couple of beers while it bakes; makes the time go by better.

Goes great with some stew or beans.
And beer.
