Recipe of the Week: Chocolate pudding

1/2 cup white sugar or substitute
1/3 cup unsweetened cocoa powder
3 tablespoons cornstarch
2 cups milk or 2%
2 teaspoons vanilla extract

In a microwave-safe bowl, mix up the sugar, cocoa and cornstarch.
Add the milk and whisk well; don’t want any lumps
Place in the microwave, and nuke it for 1 minute on high.
Stir it well, then nuke at one minute intervals, stirring well in between doses.
Once it is thick enough, take it out and stir in the vanilla.
Let it sit for a few minutes, then pour into individual serving dishes. Put a bit of plastic wrap on the top to prevent skinning and let it chill out.
Top with some whipped cream, strawberries or bananas.
Or all of the above. Live a little!
